Potatoes with Krokos Kozanis (saffron) and garlic

INGREDIENTS
- 1 entire chicken (about 1,5 kilograms)
- 2 garlic cloves
- 2 medium onions
- 400g peeled tomatoes
- 1 tablespoon finely cut parsley
- 50g butter
- 2 shots of cognac
- 2 cloves
- Salt – pepper
- One pinch of Krokos Kozanis (saffron) in powder
INSTRUCTIONS
Cut the chicken in 4 servings, place it in a deep pan with a lid, adding the garlic, finely cut the onions and a ½ cup of water. Cover and let it simmer for about 1/2 hour. Remove the lid, add the tomatoes finely cut, the garlic, salt-pepper, basil leaves, cloves and butter. Let it all simmer for another ½ hour. Fifteen minutes before remove the pan off the heat, add the cognac and the Krokos Kozanis (saffron) and cover the pan until the chicken is tender.
